The Big Coppenagh Bite

A taste of Carlow on a bun

Ingredients:

  • 500g Coppenagh House Farm Wagyu Steak Mince

  • 2 pinches of Achill Island Smoked Sea Salt

  • 1 tsp of Clo & Alí Seasoning

To Serve:

  • Crusty bread rolls

  • Coolattin Cheddar

  • Rocket

  • Red Onion Marmalade


Method:

  1. Mix the mince, smoked sea salt, and seasoning gently in a bowl—don’t overwork it.

  2. Take a good-sized handful and shape it loosely.

  3. Throw it straight onto a hot BBQ or pan.

  4. Press it down slightly with a spatula to get those crispy, caramelised edges.

  5. Cook to your liking.

  6. Serve in a crusty roll with melted Coolattin Cheddar, rocket and a dollop of red onion marmalade.
